2-ways pizza pairing with RW The Blend

Pizza dough recipe
Make 4 pizza bases.

Ingredients

2 cups lukewarm water

1 tsp sugar

10g active dry yeast

2 tbsp olive oil

5 ¼  cups bread flour 

1 tbsp salt

2 cups tomato puree 

Method

  • In the bowl of a stand mixer, combine all the ingredients.
  • Turn the mixer on a medium speed and knead for 8 – 10 minutes until an elastic dough has formed.
  • Place the dough in a large oiled bowl and cover with plastic wrap.
  • Let it rest for 1 hour in a warm place until doubled in size.
  • Knock down the dough and divide into 120g balls ready for use. 
  • Pre heat the oven to 250°C with a pizza stone placed in the middle.
  • Cover your work surface well with bread flower.
  • Pour yourself and friends a glass of RW The Blend.
  • Roll out your dough balls into a round shape roughly 30cm in diameter. 
  • Cover the bass in tomato puree, and place on top of the hot pizza stone for 1 ½ minutes.
  • Remove the base and place aside ready for toppings. 

Local salami, marinated aubergine, and fresh Adam’s figs
Makes 1 pizza.

Ingredients

1 par-cooked pizza base1

1 ½ cup mozzarella cheese, grated

7 pieces of local SA salami

½ cup marinated aubergine

4 – 5 Adam’s figs, cut in half

Danish feta for garnish

Wild rocket for garnish

Method

  • Cover the base evenly with the mozzarella cheese.
  • Place the salami, marinated aubergine and figs all over.
  • Place on top of the hot pizza stone in the oven and bake for 2 – 3 minutes.
  • Remove from the oven and sprinkle on some of the Danish feta and wild rocket to finish.
  • Enjoy and share with a glass of RW The Blend.

Burrata, roasted red pepper and green olive
Makes 1 pizza.

Ingredients

1 par-cooked pizza base

1 ½ cups mozzarella cheese

6 – 8 pieces roasted red pepper

½ cup green olives, pitted and halved 

1 burrata 

Wild rocket for garnish

Method

  • Cover the base evenly with the mozzarella cheese.
  • Place the red pepper and green olives all over.
  • Place on top of the hot pizza stone in the oven and bake for 2 – 3 minutes.
  • Remove from the oven and place the burrata in the middle of the pizza and cut open for the inside to ooze all over the pizza.
  • Finish with a sprinkle of wild rocket.
  • Enjoy and share with a glass of RW The Blend.
